Delightfully crispy Zucchini Corn Fritters bursting with sweetness from corn and freshness from zucchini, perfect for any occasion.

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze to remove excess moisture.
  2. Combine the grated zucchini, corn, flour, cornmeal, Parmesan cheese, eggs, parsley, garlic powder, salt, and pepper in a large bowl. Mix until well combined.
  3. Heat oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil and flatten slightly.
  5. Cook for 3-4 minutes on each side, or until golden brown.
  6. Remove from the skillet and drain on paper towels.
  7. Serve warm and enjoy immediately.

Notes

For a gluten-free version, substitute the flour with a gluten-free alternative like almond flour or chickpea flour. Don’t skip squeezing the zucchini for the best texture.
