Crispy on the outside and tender on the inside, these zucchini corn fritters are a delightful snack or side dish perfect for any occasion.

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prepare the Mixture: In a large bowl, combine the grated zucchini, corn, flour, eggs, Parmesan cheese, green onions, baking powder, salt, and pepper. Mix until everything is well combined.
  2. Heat the Oil: Pour a generous amount of oil into a frying pan and heat it over medium heat.
  3. Form the Fritters: Using a spoon, drop spoonfuls of the mixture into the hot oil and flatten each fritter slightly.
  4. Fry to Perfection: Carefully fry the fritters until golden brown on each side, about 3-4 minutes per side.
  5. Drain Excess Oil: Remove the fritters from the pan and place them on paper towels to drain excess oil.

Notes

For the best texture, squeeze out excess moisture from the grated zucchini and avoid overcrowding the frying pan.
