Crunchy on the outside and tender within, these zucchini fritters are a perfect appetizer or light lunch, featuring the salty hit of Parmesan and the fresh taste of green onions.

Ingredients

  • 2 medium zucchinis
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Grate the zucchinis using a box grater or a food processor, and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.
  2. Squeeze out as much moisture as possible using your hands, ensuring your fritters aren’t soggy.
  3. Combine the drained zucchini, flour, grated Parmesan cheese, chopped green onions, egg, and black pepper in a large bowl. Stir until well combined.
  4. Heat a generous amount of oil in a skillet over medium heat. Test if it’s hot enough by dropping in a tiny spoonful of the zucchini mixture; if it sizzles, you’re ready!
  5. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove the fritters from the skillet using a slotted spatula and place them on paper towels to drain excess oil.
  8. Serve your zucchini fritters hot, ideally with a tangy yogurt dip or a fresh salad on the side.

Notes

Make sure to drain the zucchini well to avoid soggy fritters. Feel free to customize with herbs or different cheeses.
