A healthy and delightful take on shrimp scampi featuring spiralized zucchini noodles, garlic, and fresh herbs.

Ingredients

  • 2 medium zucchinis
  • 1 pound shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup white wine or chicken broth
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Spiralize the zucchini. Use a spiralizer to make zucchini noodles and set aside.
  2. Heat the olive oil. In a large skillet, heat olive oil over medium heat.
  3. Sauté garlic and red pepper flakes. Add minced garlic and red pepper flakes, cooking for about 1 minute.
  4. Cook the shrimp. Add shrimp to the skillet and season with salt and pepper. Cook until shrimp is pink and cooked through, about 3-4 minutes.
  5. Simmer with wine or broth. Pour in white wine or chicken broth, letting it simmer for 2 minutes.
  6. Toss in zucchini noodles. Add zucchini noodles to the skillet, tossing to coat. Cook for an additional 2-3 minutes until noodles are tender.
  7. Garnish and serve. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove to avoid overcooking the shrimp.
