Delight in soft and light fluffy pancakes perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Some lumps are okay.
  4. Preheat a non-stick skillet or griddle over medium heat.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles appear on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  7. Serve warm with syrup, fruit, or your favorite toppings.

Notes

Let the batter rest for a few minutes for extra fluffiness. Avoid overmixing.
